I don't see a lot of entry level jobs, what's the next best option for a recent graduate?

I am a recent graduate. I have a few years of work experience in software engineering but I wanted to switch to data analytics so I did my master's in analytics. I have been job hunting for over an year now. I have had a handful of interviews. I see that the job roles for entry level analysts are drastically reducing and I am not experienced enough to start a senior role. A mid level role is maybe something I can try but that is a long stretch as well. Not sure where to head from here. There are no entry level jobs and I am underqualified for a experienced role.
