Projects for data or business analyst

Hi everyone I'm looking for a job in analytics, before applying for the jobs I want to build a strong resume. So I need to add some good projects which could make my resume shortlisted at least. Plz tell me what projects need to be added in the resume in today's AI world. And also where can I find the dataset for the project you have recommended.
